Refreshing gazpacho my way

Dear yogis!
Summer time is the time for gazpacho in my country, Spain. It’s so hot that it’s about the only thing you want to eat or rather, drink! It is nourishing and healthy, so you can survive on gazpacho for quite a while! Although the temperatures here in Belgium are not that high, today i am bringing you a gazpacho recipe, not the traditional one, but adapted to my taste! I hope you enjoy it!
Ingredients for 3-4 portions:
400 gr ripe tomatoes
1 garlic clove
2 carrots
4 Tbsp extra virgin olive oil
1 Tbsp apple cider vinegar
pinch of Himalayan salt
Chop the vegetables and put them in a blender, mix well. Add olive oil, vinegar and salt to taste. You can also add 1/2 red pepper. I skipped it because pepper and my belly are not good friends. After blending, refrigerate for at least 1-2 hours until it’s really fresh. Enjoy! 😛
