Zucchini and broccoli soup

This weeks recipe is a delicious zucchini and broccoli soup, perfect for winter weather!
Ingredients:
3 cups zucchini
3 cups broccoli
1 medium onion
2-3 cloves garlic
2 Tbsp coconut oil
4 cups vegetable stock
Salt & pepper to taste
Heat the coconut oil and cook the onion until it’s translucent, then add the garlic and cook for one more minute or so. Add the zucchini, broccoli, salt and broth. Cover and let simmer for about 15 minutes or until the vegetables are tender. Puree the soup with an immersion blender or with a regular blender. Blend well until smooth. You can serve with pumpkin or sunflower seeds. Enjoy!
