Quinoa rainbow salad

Dear yogis!
This weeks recipe is a rainbow salad! Not only is it beautiful, but it’s full of antioxidants and very tasty, what more can you ask for? And it’s also very quick to prepare!
Ingredients for 2 large portions:
1/2 cup quinoa
1/2 cucumber
1/2 cup red cabbage
1 carrot
1 avocado
1 tsp turmeric
For the dressing:
1 Tbsp freshly squeezed lemon juice
1 Tbsp apple vinegar
1 Tbsp olive oil
1 tsp dijon moustard
For the quinoa, first wash it very well until the foam is gone and the water comes out clear. Cook the quinoa in double the amount of water, so 1 cup of water for 1/2 cup of quinoa. Add the turmeric. Let simmer until most of the water is absorbed. Set aside from the heat and let it absorb the water completely. The turmeric gives the quinoa a beautiful vibrant yellow colour and it’s very beneficial for the health. When the quinoa is cold, add the cucumber, diced in small pieces, the avocado, the cabbage and the carrot. I choose those vegetables to play with the colours and because that was what i found on my fridge, but you can make endless combinations!
For the dressing, mix the ingredients and pour over the salad! Enjoy! 😛
