Chocolate zucchini brownies

Dear yogis!
I couldn’t wait to share this weeks recipe, so good it is! As in Brussels we are still having baking weather, that’s what i am doing! It’s also zucchini season, so here are the most delicious, gooey and chocolatey zucchini brownies ever!!
Chocolate zucchini brownies
2 large eggs
1 Tbsp vanilla extract
3 Tbsp maple syrup
1/4 cup grated apple
1 cup oats flour
1/2 cup pure cocoa powder, no added sugar
1 1/2 tsp baking soda
1/4 tsp salt
2 cups grated zucchini
1 cup chocolate chips (i used 92% chocolate cut into little pieces)
Preheat the oven to 180°C. Line a brownie pan with baking paper or grease it. In a large bowl, mix eggs, vanilla, maple syrup and grated apple. In a separate medium bowl mix flour, cocoa powder, baking soda and salt. Make sure there are no lumps. Add dry to wet and stir gently until well combined but don’t over mix. Drain away the water from the zucchini. Then fold in the zucchini and the chocolate chips. Pour the batter into the pan. Bake for 30-35 minutes or until a toothpick inserted in the middle doesn’t come out gooey.
Due to it’s high moisture content it’s better to store it in the fridge. Enjoy with greek yogurt, strawberries or plain! You won’t believe how good it is! 😀
